Caribbean French Toast w/ Coconut Syrup

Oh, how I love that my son is into culinary arts!
Oh, how I love that he makes breakfast 3 days a week.
Oh, how I love when I assign him an extra yummy breakfast recipe!
(yeah for homeschooling them in the areas of their passions)

I printed this recipe and assigned it to Ki as his Morning Breakfast to make for Culinary Arts Class.

Caribbean French Toast

(3 servings)

  • For The French Toast:
  • 1/2 cup orange juice
  • 1/4 cup whipping cream
  • 2 Tablespoons white sugar
  • 2 large eggs
  • 1/2 teaspoon ground cinnamon
  • 1 dash of ground nutmeg
  • 6 slices French bread - about 1-inch thick
  • butter or margarine for frying

  • For The Coconut Syrup:
  • 1/2 can of coconut milk
  • 2 teaspoons cornstarch
  • 3/4 cup light corn syrup
  • 3 Tablespoons white sugar
  • 3 Tablespoons shredded sweetened coconut

First prepare the syrup: In a sauce pan over medium heat, stir the coconut milk with the cornstarch until the cornstarch dissolves. Add all remaining ingredients. Increase heat to high - stir often. As soon as the mixture reaches a rolling boil, turn off the heat. Set aside.

For the French Toast:

In a large mixing bowl, beat the eggs with the orange juice, whipping cream, sugar and spices.

Prepare a large skillet by placing it over medium-high heat and melting 1 Tablespoon of butter.

Place the sliced bread into the egg mixture and flip to coat completely. Let each slice sit in the mixture for about 20 seconds to absorb the mixture.

Fry the bread in the prepared skillet (add as many bread slices as the skillet will comfortably hold). After about two minutes, check if the underside has browned. Flip and fry the other side to golden brown. When cooking in batches, add a little more butter or margarine each time.

Place French Toast on serving plates and serve with the warm coconut syrup.

A little taste of Jamaica for breakfast. The French Toast is also delicious with maple syrup as a topping if you want to skip the coconut syrup. This is so good with fresh fruit as a side dish.

The Chef in Action



We don't like our french toast soggy in the middle, so we don't soak it. It was enough egg mixture for almost a whole loaf of Texas Toast using the, 'quickly dip it' method.

This week I am puling out all the science kits we've not done/finished. I'll set them all out and the boys can do what they want with them all week. I think I'll assign 3 days that it is required to do something...maybe. or maybe they'll do more with none assigned.. we'll see.

Tandoori Chicken

I left the handwritten Recipe in the fruit bowl. Someone put a half eaten apple in the fruit bowl. The handwritten recipe now has mold on it. I can not find the reipe anywhere on my laptop, though I KNOW I have written out here before. Both in a blog and also in a WORD Document.. I need a better file-retrieval system.

So, here is the recipe that was written-out by one of Brian's co-workers many years ago.

TANDOORI CHICKEN

2- 3-3/5 pound Chickens (I just use about 6 pounds of Chicken Breast)
1 TBSP + 1.5 tsp NaCl
1/4 liquid Cup Fresh Squeezed Lemon Juice
1/4 liquid Cup Fresh Squeezed Lime Juice
1 liquid cup plain yogurt
4 medium cloves of garlic, peeled & quartered
2 tsp fresh minced ginger (peeled)
1 tsp cumin
1/2 tsp tumeric
1 TBSP cayenne pepper
1/2 tsp freshly ground black pepper
1/4 tsp ground cinnamon
a large pinch of ground cloves
1 tsp red food coloring- optional (I never use this)

rinse chicken under cold water. pat dry. if using whole chickens. cut them apart at the joints and cut breast.back in half. remove skin. score.

put chicken into a large bowl sprinkle with salt, add lemon/lime juice. toss to coat. set asside.

Mix everything else in a blender or food processor. Pour over chicken, turn to coat well. Cover tightly.
Refrigerate 1-3 days.

Grill , brush with any left-over marinade.

I really shortened the instructions.

**This is one of Brian's favorites. I get Naan Bread from Trader Joes to go with it. (& rice and some veggies)

G&C eat all the left overs the next day.

I need to raise my own chickens.
